VAL'S KIELBASA DISH 1 package kielbasa, angle sliced 4 large potatoes or 6 medium, quartered 4 large carrots or 6 medium, eighthed 2 cans French style green beans, drained 1 small or medium onion, sliced 1 head cabbage, quartered 2 cups water salt and pepper Layer ingredients as listed in a large stove top pot. Pour water over all. Season with salt and pepper to taste. Bring to a boil, then cover and reduce heat to a simmer. Cook 1 to 1 1/4 hour until cabbage is tender. Serve with butter, salt and pepper. Excellent one pot meal. Submitted by: Valorie Burleigh ------------ WINTER KIELBASA STEW 1 lb. turkey kielbasa sliced into angled ½ inch pieces 1 cup celery chopped into ½ inch pieces (add celery leaves as well) 2 ½ cups all purpose potatoes chopped into ½ inch wedges 1 cup carrots chopped ½ cup green zucchini chopped ½ cup yellow squash chopped ½ cup chopped onion 2 cups chicken stock 1 cup water 1 tablespoon Worcestershire sauce 1 tablespoon tapioca 2 tablespoons cider vinegar 1 tablespoons spicy mustard 1 tablespoon honey mustard 1 teaspoon celery seed 1 teaspoon sweet basil 1 teaspoon minced onion 2 teaspoon ground pepper Combine all ingredients into slow cooker and cook on high for four hours or on low for six hours. Five to seven servings. Serve with corn muffins. Submitted by: Tommy Lusignan --------------------- KIELBASA SAUSAGE WITH CABBAGE AND ONIONS 1 pack of kielbasa sausage 1 head of green cabbage 1 white onion vegetable oil salt pepper Pour vegetable oil into a large frying pan. Add sausage to the frying pan. Heat to medium high. Cook until brown. Do not drain or the cabbage and onions will stick to the pan. Cut the cabbage into slices 2 inches thick and stir into sausage. Cut onion in half, then across; add it to the pan. Cook until cabbage and onions are soft. Salt and pepper to taste. Submitted by: Cindy Kelley ------------------ BAKED KIELBASA AND SAUERKRAUT 1 1/2 lb. smoked kielbasa 1 lg. onion, thinly sliced 1 1/2 lb. sauerkraut 3/4 c. chicken broth 2 tbsp. Dijon style mustard 1/4 tsp. allspice Slice kielbasa into 1/2 inch rounds. Rinse the sauerkraut briefly and drain thoroughly. Place the kielbasa in a large heavy skillet over medium heat. Stir until sausage has rendered its fat and is lightly brown, about 10 minutes. Remove with slotted spoon to paper towels to drain. Pour off all but 1 tablespoon fat from pan. Stir in onion. Saute until wilted, about 5 minutes. Stir in sauerkraut into skillet. Stir in broth, mustard, and allspice. Heat to boiling. Stir kielbasa into sauerkraut mixture. Transfer to a deep 12-inch baking dish. Cover tightly with aluminum foil. Bake at 350 degrees until juices are bubbling, about 20 minutes. Remove from oven and let stand 5 minutes before serving.
